Heat your fat
Heat a large, wide pan over medium-high heat. Add tallow or ghee and let it melt and coat the pan evenly before adding anything else.
Soften the onion
Add diced onion and cook 5–7 minutes until soft and translucent, stirring occasionally. The onion's natural sugars will begin to caramelize, adding depth to the final dish.
Add garlic & carrot
Add the minced garlic and cook 1 minute until fragrant — this is the moment the kitchen starts to smell incredible. Then add the grated carrot and cook 3–4 minutes more, stirring to combine. Adding garlic here, after the onion has softened, lets it bloom without burning. Carrot adds natural sweetness, beta-carotene, and beautiful color.
Brown the beef
Push vegetables to the side and add the ground beef. Break it up and cook until fully browned, 6–8 minutes. Stir everything together to combine.
Season generously
Add 1 tsp sea salt, ½ tsp black pepper, and paprika if using. Stir well to distribute the seasoning throughout. Don't be shy — cabbage needs salt to release its moisture and develop flavor as it braises. You can always adjust at the end.
Stir in the tomato
Add the crushed tomatoes and stir to coat everything evenly. The acidity brightens the dish and helps tenderize the cabbage as it braises.
Add cabbage & bay leaves
Add the shredded cabbage in batches — it wilts down significantly. Tuck in the bay leaves. Cover and reduce heat to medium-low. Braise 20–25 minutes, stirring occasionally, until the cabbage is completely soft and silky.
Taste, finish & serve
Remove bay leaves. Taste and adjust salt. Serve immediately, topped with a generous spoonful of full-fat Greek yogurt or sour cream and a shower of fresh dill. The contrast of warm stew and cool yogurt is part of the experience.
Make it dairy-free
Skip the yogurt and finish with a drizzle of high-quality olive oil and extra dill. Still delicious and fully dairy-free.
Meal prep
This stew keeps beautifully in the fridge for 4–5 days and improves overnight as the flavors deepen. Make a double batch and portion for easy lunches.
